I'm going to kill this son of a bitch!

Appetizer:  Basil ricotta,red pepper dufa,roast yellow pepper,fine herb and roast garlic vinaigrette
 
Entree:  Seafood Pescatore (cod,shrimp,diver scallop,red peppers)
 
Nice appetizer right? Too bad tonight was one of those nights where it seemed everyone ordered "extra potatoes" with
everything. I was dressed like John Travolta ready to dance and ended up at the Polka fest. It happens, no big deal.

The word dufa is from my fathers language, Ladin, from the Alps. The translation would mean something soft or pureed.
I roasted the peppers and peeled them, ran them in the cusinart and then put them in a coffee filter and pressed all the moisture out of them. I then seasoned them with lemon juice and garlic, and when I made the ricotta piped that into the center so it set up
like an egg yolk. I know I have written about Thomas my assistant and the questions he will ask me that make me nuts.
I know people think that's just Mike, that haughty, condescending, arrogant bastard that has patience for nothing or anyone.

Well guess what, if you know Bob Dorough, he wrote those tunes for Sesame Street, and plays for the kiddies at the Jazz festival.
He just loves children doesn't he. He came in the kitchen tonight after his meal to say he enjoyed himself, Thomas asked him two
questions and Bob grabbed a large French knife and said "I'm going to kill this son of a bitch!". I'm vindicated. Bob's in the county lock-up, funeral for Thomas is Monday. I've got the pictures to prove it. Have a nice week everyone.
